The grey sea salt is harvested on the bottom of the salt pans during a short period that goes from late June to early September. This salt becomes grey thanks to the clay in which are made the salt pans so that the salt is dried naturally. The grey sea salt is going to store all the trace elements such as calcium, potassium, magnesium, copper, iron, and zinc, all the mineral salts present in the ground and is going to preserve the iodine. The grey sea salt is mainly used for the cooking of foods. The grey sea salt is conditioned in transparent plastic jars, in small bags or in box. The "ile de ré" benefits from an exceptional sunny climate, the number of sunny days are equivalent to the Mediterranean coasts. Facing the Atlantic Ocean, and with the help of the Gulf Stream, we receive each year the "blue ribbon" that is awarded to the less polluted coasts of France. So many advantages for the production of grey sea salt and fleur de sel. Esprit du sel, directed by Mr. and Mrs. Pelin, contribute since 1986 to preserve and to advantage the ile de re heritage which are the saltmarshes. They produce grey sea salt and fleur de sel and have created a range of products such as flavored salt, condiments and traditional products like the caramels with fleur de sel.
